It is widely believed that Dylan took this suburban high street restaurant to new heights, pushing gastronomic boundaries that were unheard of in Ireland at the time. It was in Mint where Dylan won his first Michelin star and was also honoured with many Irish accolades. Mint was one of the most talked about restaurants in Ireland, and recognised as one of the most exciting places to eat of its time.
Dylan believes that as hard as Mint was, with its labour intensive artistic approach, it was there he first learned how to be truly innovative, how to use his imagination on his own and how to drive a team in order to achieve perfection. Everyday Dylan was supported by his partner Gerard Courtney, front of house Pierre Paillot and an incredibly hard working team of chefs and waiters to which Dylan is still very grateful.
